Now… We love traditional activities and food in the run up to and at Christmas. One such tradition is to make a gingerbread house. We made our (shop bought) Gingerbread house about 2 weeks before Christmas. It was gorgeously smothered in icing sugar and sweets. Delicious.
The children had to patiently wait until Christmas to start picking away. In no doubt time all the sweets were gone and the house nibbled!
What to do with all that slightly stale Gingerbread? Green Mum’s SAHD had the bestest idea: Gingerbread and Butter pudding, the best left over treat!
This is how we made it:
Ingredients
* whatever gingerbread you have left
* some slices of white bread (at least half the surface area of the gingerbread – I used 3)
* butter and jam
* 350ml of milk
* 50ml of cream
* approx 3 tablespoons of caster sugar
* 2 eggs
1. Butter and lightly jam your bread
2. Place a layer of gingerbread and bottom of deep dish
3. Place a layer of bread (my layers are reversed, but I think the gingerbread would have benefited from the “soggy” bread being on top of it, rather than under it, if that makes sense)
4. Repeat process
5. Warm the milk and cream, add the sugar
6. Beat the eggs and add the milk mixture
7. Pour over gingerbread and bread and leave to stand for 30min
8. Cook in preheated oven (180C) for approximately 30-40min
Serve with Custard. Scrummy.

So I added 1/4 C of sugar, plus a little bit more and some molasses, some cinnamon and a little vanilla. This was SOOOO good! I never thought of doing anything else but tossing the leftover gingerbread house – though I did have to save some of it for my son to eat straight up. Thanks!
